Recipe Review: Mashed Cauliflower

Source recipe: "Mock" Garlic Mashed Potatoes

I found this recipe last summer and fell in love with it. It's a great, easy side and an awesome substitute for mashed potatoes. You can really make it however you want, but here is how I do it...

Mashed Cauliflower

Ingredients:
1 medium head cauliflower
1 tablespoon cream cheese, softened
1 tablespoon unsalted butter or margarine
1/4 cup grated Parmesan cheese
1/2 teaspoon minced garlic (or 1/2 teaspoon garlic powder)
1/8 teaspoon straight chicken base or bullion (can substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
Optional for garnish:
1/2 teaspoon chopped fresh or dry chives
3 tablespoons unsalted butter or margarine

Directions
:

  • Heat water in a large pot to boil; clean and cut cauliflower into small pieces while the water heats up
  • Cook cauliflower in boiling water for about 6 minutes or until very well done (should split easily when pierced with a fork); drain well
  • Using an immersion blender, hand mixer, food processor, or hand masher combine the hot cauliflower, cream cheese, butter (or margarine), Parmesan, garlic, chicken base (or salt), and pepper until smooth.
  • Garnish with chives and top with pads of butter, if desired

Mash it...
Serve it! Pictured with broiled steak and balsamic onions.
